Stuffed Potato Soup

I love soup and my wife, Michele loves stuffed baked potatoes. I think she will want to run out and make this soup this weekend!


5 large baked potatoes. (bake at 350 degrees for 75 minutes)

5 strips bacon, cooked crispy

1/2 pound cheddar cheese, shredded

4 tablespoons butter

1 1/2 quarts milk

Salt and pepper


Peel the skin off the potatoes and chop into chunks. In a large sauce pan melt the butter over medium-high heat, then stir in the flour, continue cooking for 2 minutes, stirring until smooth. Add the milk, stir and cook for another 2 minutes. Add the potatoes; take a potato masher and mask just a little. Bring mixture to a simmer until the soup thickens. Chop up the bacon, add it to the soup. Season with salt and pepper to taste. Add the cheese, mix well. Simmer for approximately 15 minutes more.
