4 TBSP butter
2 cups chopped onions
1 cup chopped celery
5 cups chicken stock
1 1/2 teas thyme
1 bay leaf
salt & pepper
1 can (2lbs 3oz) peeled Italian plum tomatoes drained & chopped
1 cup chopped flat leaf parsley
6 large red potatoes peeled & diced
3 dozen clams chopped ( or 5 6.5 oz cans clams,drained )
In a large soup pot melt butter. Add onions & celery. Cooked covered about 25 minutes. Add remaining ingredients & simmer partially covered for 25 minutes. Add clams. Serve with saltines.
