Recipe Rants: Yankee Pot Roast and Vegetables

It is Crock Pot Sunday and I wanted to share what I am making. It is called Yankee Pot Roast and Vegtables. It looked like a great dish to make when I was looking through the Crock Pot Slow Cooker Bible that I got for Christmas from my wife Michele.

The ingredients were simple enough even though I had no idea what a parsnip was!

Yankee Pot Roast in Crock Pot


1 beef chuck roast (about 2 1/2 pounds)

Salt and pepper

3 unpeeled medium potatoes

2 large carrots, cut into 3/4 inch slices

1 medium onion, sliced

1 large parsnip, cut into 3/4 inch slices

2 bay leaves

1 teaspoon dried rosemarry

1/2 teaspoon dried thyme

1/2 cup beef broth

[Rewind: Mac N Cheese ]


1. Trim excess fat from beef and discard. Cut beef into serving sized pieces; sprinkle with salt and pepper.

2. Combine potatoes, carrots, celery, onion, parsnip, bay leaves, rosemarry and thyme into the Crock Pot slow cooker. Place beef over vegatnles, Pour brooth over beef. Cover; cook on low for 8 1/2 to 9 hours, or until beef is fork-tender.


As a special treat that I dont normally splurge on is Chocolate Chip Cookie Sundae

1 chocolate chip cookie, baked from those little Tollhouse sqaures

1 scoop of French Vanilla ice cream, place atop of cookie

Drizzle Carmel syrup over ice cream and cookie
